These lemon curd tarts are a delightful combination of sweetness and tartness, perfect for any occasion.

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1/3 cup fresh lemon juice
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 tablespoon lemon zest
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine flour and powdered sugar. Cut in the softened butter until the mixture resembles coarse crumbs. Press the mixture into the bottom and up the sides of tartlet pans.
  3. Bake for 12-15 minutes or until lightly golden.
  4. In a saucepan, whisk together lemon juice, granulated sugar, eggs, lemon zest, and salt. Cook over medium heat until thickened, stirring constantly.
  5. Pour the lemon curd into the baked tart shells.
  6. Bake for an additional 10-12 minutes.
  7. Let cool before serving.
