A light and fluffy Lemon Bundt Cake perfect for any occasion, infused with zesty lemon flavor and easy to make.

  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup buttermilk, room temperature
  • 3 large eggs
  • 2 teaspoons lemon zest
  • 1/4 cup fresh lemon juice
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour a Bundt pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Mix in the lemon zest, lemon juice, and vanilla extract.
  5. Whisk together the flour, baking powder, baking soda, and salt in another bowl.
  6. Gradually add the dry mixture to the wet ingredients, alternating with buttermilk.
  7. Pour the batter into the prepared Bundt pan and smooth the top.
  8. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  9. Cool the cake in the pan for 10 minutes before inverting onto a wire rack.
