Zesty and sweet lemon bars that are perfect for any occasion, easy to make, and universally loved.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup freshly squeezed lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon baking powder
  • Pinch of salt
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking dish.
  2. Mix the flour and powdered sugar in a bowl. Cut in the butter until crumbly. Press this mixture into the bottom of the prepared dish.
  3. Bake for 15 minutes or until set.
  4. Whisk the eggs and granulated sugar in another bowl until smooth. Add the lemon juice, lemon zest, baking powder, and salt. Mix well.
  5. Pour the lemon mixture over the baked crust.
  6. Bake for an additional 20-25 minutes until set.
  7. Let cool, then dust with powdered sugar before serving.

Notes

Serve lemon bars chilled or at room temperature. They can also be paired with whipped cream or fresh berries.
