Classic lemon bars with a buttery crust and a bright, zesty lemon filling that is sure to bring joy.

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup freshly squeezed lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish.
  2. Mix the all-purpose flour and powdered sugar in a medium bowl. Cut in the softened butter until crumbly. Press mixture into the bottom of the dish and bake for 15 minutes.
  3. Whisk together the granulated sugar, eggs, lemon juice, lemon zest, and salt until smooth.
  4. Pour the lemon mixture over the baked crust, spreading evenly.
  5. Bake for an additional 20-25 minutes, until the filling is set and slightly firm.
  6. Cool completely, dust with powdered sugar, cut into squares, and serve.

Notes

For a firmer texture, add more flour to the crust. Use fresh lemon juice for the best flavor.
