A simple yet flavorful lemon-baked cod dish, perfect for a weeknight dinner.

Ingredients

  • 4 cod fillets
  • 2 tablespoons olive oil
  • 1 lemon (juiced and zested)
  • 2 cloves garlic (minced)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley (chopped)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix together the olive oil, lemon juice, lemon zest, minced garlic, salt, and pepper until well combined.
  3. Arrange the cod fillets in a baking dish.
  4. Drizzle the marinade over the top of the fillets.
  5. Bake for 12-15 minutes, or until the fish flakes easily with a fork.
  6. Garnish the cod with freshly chopped parsley before serving.
