  • 1 teaspoon coriander
  • 1 teaspoon paprika

  • Salt and pepper to taste
  • 1 can (14 oz) coconut milk
  • 1 can (14 oz) diced tomatoes
  • 2 tablespoons curry powder
  • Fresh cilantro for garnish
  • Rice or flatbread for serving

Instructions

  1. Prepare the meatball mixture: In a large mixing bowl, combine the ground beef, finely chopped onion, minced garlic, minced ginger, cumin, coriander, paprika, turmeric, salt, and pepper. Mix thoroughly until all ingredients are well integrated. Form the mixture into evenly sized meatballs.
  2. Sauté the meatballs: Drizzle a little oil in a non-stick skillet over medium heat. Add the meatballs in batches, browning them for about 5-7 minutes on all sides until they turn golden.
  3. Remove and set aside: Once the meatballs are nicely browned, remove them from the skillet and set them aside on a plate.
  4. Create the curry base: Pour the coconut milk and diced tomatoes into the same skillet. Stir in the curry powder and let it bubble gently, filling your kitchen with an inviting aroma.
  5. Return the meatballs: Carefully add the browned meatballs back into the pan, ensuring they are fully submerged in the luscious sauce.
  6. Simmer to perfection: Cover the skillet and allow the meatballs to simmer for 20-25 minutes, letting the flavors meld beautifully.
