A hearty and comforting casserole featuring tender chicken, zesty tomatoes, and a cheesy topping, perfect for gatherings.

Ingredients

  • 2 cups shredded cooked chicken
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can diced tomatoes with green chilies
  • 1 cup chicken broth
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 810 corn tortillas, cut into strips
  • 2 cups shredded cheddar cheese
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté onion and bell pepper in a large skillet until soft.
  3. Combine shredded chicken, cream of chicken soup, cream of mushroom soup, diced tomatoes, chicken broth, chili powder, salt, and pepper in a large bowl.
  4. Layer the bottom of a greased 9×13 inch baking dish with tortilla strips.
  5. Spread half of the chicken mixture over the tortillas, followed by a layer of cheese.
  6. Repeat the layers, finishing with cheese on top.
  7. Bake for 30-35 minutes, or until the casserole is hot and bubbly.
  8. Let it cool for a few minutes before serving.

Notes

For a vegetarian version, substitute chicken with cooked beans or mixed vegetables. You can prepare the casserole ahead of time and bake it before serving.
