  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 large egg yolks
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup fresh key lime juice
  • 1 teaspoon grated lime zest
  • Whipped cream (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine graham cracker crumbs, sugar, and melted butter in a medium bowl.
  3. Press the mixture into the bottom and up the sides of a pie dish.
  4. Bake the crust for about 8-10 minutes until set and lightly golden.
  5. Whisk together the egg yolks, sweetened condensed milk, key lime juice, and lime zest until smooth.
  6. Pour the filling into the cooled crust, spreading evenly.
  7. Bake for an additional 15 minutes until slightly puffed with a jiggle in the center.
  8. Cool at room temperature before refrigerating for at least 3 hours.
