A light and fluffy Japanese cheesecake with a creamy interior, perfect for dessert lovers.

Ingredients

  • 200g cream cheese
  • 50g unsalted butter
  • 100ml milk
  • 3 large eggs
  • 60g granulated sugar
  • 40g cake flour
  • 20g cornstarch
  • 1/2 tsp lemon juice
  • Pinch of salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Melt the cream cheese, butter, and milk together over low heat until smooth.
  3. Cool the mixture slightly.
  4. Whisk in the egg yolks one at a time, then add the lemon juice.
  5. Incorporate the cake flour and cornstarch into the mixture.
  6. Beat the egg whites with a pinch of salt until soft peaks form, then gradually add the sugar until stiff peaks form.
  7. Fold the egg whites into the cheese mixture.
  8. Pour the mixture into a lined cake pan.
  9. Bake in a water bath for about 60 minutes or until set.
  10. Cool before serving.

Notes

Serve plain, with powdered sugar, berries, or a drizzle of matcha green tea.
