  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice
  • 1 teaspoon baking powder

  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs, lemon zest, and lemon juice, mixing until well combined.
  4. Whisk together the flour, baking powder, and salt in another bowl.
  5. Gradually add the dry ingredients to the wet, mixing until just combined.
  6. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until edges are lightly golden.
  8. Cool and dust with powdered sugar before serving.

Notes

For a softer cookie, remove them from the oven when they appear slightly underdone, as they will continue to cook on the baking sheet.
