A delightful loaf of sweet pecan bread, perfect for cozy moments with friends and family.

Ingredients

  • 1 cup Granulated Sugar (optional: swap for brown sugar)
  • 1/2 cup Brown Sugar (optional)
  • 1/2 cup Vegetable Oil or Melted Butter
  • 2 large Eggs
  • 2 cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 1 teaspoon Vanilla Extract
  • 1 cup Chopped Pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it lightly or lining it with parchment paper.
  2. Toast the chopped pecans on a baking sheet for about 5-7 minutes until lightly golden.
  3. Combine the granulated sugar and brown sugar in a large mixing bowl and whisk them together.
  4. Add the vegetable oil (or melted butter) to the sugars and mix well.
  5. Crack in the eggs and add vanilla extract, whisking until creamy.
  6. Whisk together the flour, baking powder, and salt in a separate bowl.
  7. Fold the dry mixture into the wet mixture until just combined, then fold in the toasted pecans.
  8. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  9. Bake for about 50 minutes or until a toothpick inserted in the center comes out clean.
  10. Cool the loaf in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Pair with whipped cream cheese, honey, or vanilla ice cream for added delight. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
