A comforting Irish Vegetarian Stew filled with hearty vegetables and fragrant herbs, perfect for autumn.

Ingredients

  • 2 tbsp olive oil
  • 1 large onion (chopped)
  • 34 garlic cloves (minced)
  • 3 large carrots (sliced)
  • 3 celery stalks (sliced)
  • 34 medium potatoes (diced)
  • 1 parsnip (peeled and sliced, optional)
  • 1 small leek (cleaned and sliced, optional)
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1 bay leaf
  • Salt and freshly ground black pepper (to taste)
  • 1 cup pearl barley or diced tomatoes (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Add the chopped onion to the pot and cook until it’s translucent and soft, about 5 minutes.
  3. Stir in the minced garlic and sauté for an additional minute.
  4. Add the sliced carrots, celery, potatoes, parsnip, and leek if using. Stir and let them cook for 3 to 4 minutes.
  5. Pour in the vegetable broth, along with the dried thyme, parsley, bay leaf, salt, and pepper.
  6. Include the pearl barley or diced tomatoes if using, and mix well.
  7. Bring the stew to a boil, then reduce the heat to low, cover the pot, and let it simmer for 25 to 30 minutes.
  8. Remove the bay leaf, taste, and adjust the seasoning as needed.
  9. Ladle the stew into bowls and serve warm.

Notes

This stew can be stored in the refrigerator for up to 5 days and freezes well for up to 3 months.
