Warm, flaky pastries filled with seasonal vegetables, bringing comfort and joy to any occasion.

Ingredients

  • 2 cups mixed seasonal vegetables (such as carrots, potatoes, and peas)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 package of puff pastry (2 sheets)
  • 1 egg (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Sauté the onion and garlic in olive oil until softened.
  3. Add mixed seasonal vegetables and cook until tender, seasoning with thyme, rosemary, salt, and pepper.
  4. Roll out the puff pastry and cut it into circles, about 4-6 inches in diameter.
  5. Place a spoonful of the vegetable mixture in the center of each circle.
  6. Fold the pastry over to create a half-moon shape and seal the edges with a fork.
  7. Brush the tops with beaten egg.
  8. Bake for 20-25 minutes, or until golden brown.
  9. Serve warm or cold and enjoy!

Notes

Leftover pasties can be stored in an airtight container in the fridge for up to 3 days. To reheat, pop them in the oven at 350°F (175°C) for 10-12 minutes.
