Irish Stew with Mashed Potatoes

A comforting Irish stew featuring tender meat simmered with root vegetables, served over creamy mashed potatoes.

Ingredients

  • 1 lb lamb or beef, cubed
  • 4 cups beef broth
  • 2 cups potatoes, peeled and diced
  • 3 carrots, sliced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 cups mashed potatoes (prepared)

Instructions

  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Add the cubed lamb or beef to the pot, browning each piece on all sides.
  3. Stir in the chopped onions and minced garlic and cook until the onions are softened.
  4. Toss in the sliced carrots, diced potatoes, thyme, bay leaf, and a pinch of salt and pepper.
  5. Pour in the beef broth and bring everything to a boil.
  6. Reduce the heat to low, cover the pot, and let it simmer for 90 minutes.
  7. Ladle the hot stew over a mound of prepared mashed potatoes when ready to serve.

Notes

Irish stew pairs well with hearty bread or a green salad. Leftovers can be stored for up to three days in the fridge.
