A heartwarming Irish stew with tender meat and creamy mashed potatoes, perfect for chilly evenings.

Ingredients

  • 1 kg lamb or beef, cubed
  • 4 large potatoes, peeled and diced
  • 3 carrots, peeled and sliced
  • 2 onions, chopped
  • 4 cups beef or vegetable broth
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 1 cup milk or cream (for mashed potatoes)
  • Butter (for mashed potatoes)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the meat and brown on all sides.
  2. Once your meat is beautifully browned, add in the chopped onions and minced garlic. Sauté until the onions become translucent.
  3. Pour in the beef or vegetable broth and toss in the sliced carrots along with the thyme, rosemary, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer gently for about 90 minutes.
  4. While the stew simmers, boil the diced potatoes in a separate pot until they’re fork-tender. Drain and mash them with milk, butter, salt, and pepper.
  5. Once your stew is ready and your potatoes are mashed, ladle the steaming stew into bowls and top each serving with a scoop of mashed potatoes.

Notes

For a lighter version, try swapping half the potatoes for cauliflower. Pair with crusty bread for soaking up the gravy.
