A comforting Irish dish featuring tender cabbage and creamy potatoes, perfect for family gatherings.

Ingredients

  • 1 head of cabbage, chopped
  • 2 pounds of potatoes, peeled and diced
  • 1 onion, chopped
  • 2 tablespoons butter
  • Salt to taste
  • Pepper to taste

Instructions

  1. Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes.
  2. Sauté the onions in a separate pan with melted butter until translucent and fragrant.
  3. Cook the chopped cabbage with the onions until wilted, about 5-7 minutes.
  4. Mash the tender potatoes lightly, then fold in the cabbage and onion mixture.
  5. Season with salt and pepper to taste, serve warm, and enjoy!
