A hearty and flavorful Instant Pot Chili loaded with meat, beans, and a rich tomato base that brings the family together.

Ingredients

  • 1 lb ground beef (or turkey)
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (28 oz) crushed tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 cup beef broth
  • Optional toppings: shredded cheese, sour cream, chopped green onions

Instructions

  1. Turn on the Instant Pot and set it to ‘Sauté’. Add the ground beef and cook until browned. Once browned, drain any excess fat for a leaner chili.
  2. Add the diced onion and minced garlic, sautéing until the vegetables are softened and aromatic, about 3-4 minutes.
  3. Sprinkle in the chili powder, cumin, salt, and pepper. Stir to combine all the spices with the meat and veggies, allowing the flavors to meld for a minute.
  4. Pour in the kidney beans, black beans, crushed tomatoes, and beef broth. Stir everything together until well mixed.
  5. Close the lid of the Instant Pot, set the valve to ‘Sealing’, and select ‘Manual’ cooking for 15 minutes.
  6. Once the timer goes off, perform a quick release of the pressure. Carefully turn the valve to avoid a steam burn and let out the steam.
  7. Open the lid and give the chili a good stir. Serve hot with your choice of optional toppings like shredded cheese, sour cream, and chopped green onions.

Notes

For best flavor, let the chili sit for a few hours or overnight before serving. Adjust spices to your taste preference.
