  • 2 pounds beef chuck, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 4 cups beef broth
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, cubed
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Set the Instant Pot to ‘Sauté’ and heat the olive oil until shimmering.
  2. Add the beef chunks to the pot, browning them on all sides to lock in the flavor.
  3. Add the chopped onion and minced garlic; sauté for about 3 minutes until fragrant and translucent.
  4. Stir in the tomato paste, dried thyme, dried rosemary, salt, and pepper. Allow the spices to bloom by cooking for another minute.
  5. Pour in the beef broth, and then add the sliced carrots and cubed potatoes, mixing everything well.
  6. Close the lid securely, seal the vent, and set the Instant Pot to ‘Stew’ for 35 minutes.
  7. Once cooking is complete, let the pressure release naturally for 10 minutes, then perform a quick release for any remaining pressure.
  8. Open the lid, give it a gentle stir, and serve hot, garnishing with fresh herbs if desired.
