Easy 3-ingredient cereal bars that are perfect for a quick breakfast or as a healthy snack.

  • 3 cups Cereal (small flakes or shapes like Cheerios or Rice Krispies)
  • 1 cup Nut Butter (creamy or crunchy peanut butter, almond butter, or sunbutter)
  • 1/2 cup Liquid Sweetener (agave syrup, honey, or brown rice syrup)
  • 1/2 teaspoon Salt
  • Protein Powder (optional, adjust quantity as desired)

Instructions

  1. Prepare the Pan: Line an 8-inch square pan with wax or parchment paper to prevent sticking and allow for easy removal of the bars later.
  2. Warm the Nut Butter: If your nut butter is thick and difficult to mix, warm it in the microwave for 15-20 seconds to soften it slightly for easier blending.
  3. Combine Ingredients: In a large bowl, combine the cereal, warmed nut butter, liquid sweetener, and salt. If using, add protein powder. Stir until all ingredients are evenly blended, and the mixture starts to clump together.
  4. Transfer to Pan: Pour the mixture into the prepared pan. Use your hands or a spatula to press down firmly, compacting it evenly to ensure the bars hold together well.
  5. Chill the Mixture: Place the pan in the freezer for about 30 minutes to let the bars firm up. This cooling step helps them solidify and become easy to cut.
  6. Cut & Store: Once firm, remove the bars from the pan using the edges of the parchment paper. Cut into 12 bars and store in an airtight container in the fridge or freezer as desired.

Store these bars in an airtight container in the refrigerator for up to a week or freeze for up to three months.
