A rich and flavorful Indonesian Chicken dish simmered in coconut milk and aromatic spices, perfect for a comforting meal.

Ingredients

  • 2 lbs chicken thighs
  • 1 can coconut milk
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon curry powder
  • 1 teaspoon ground ginger
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Sauté the chopped onion and minced garlic until translucent.
  2. Brown the chicken thighs on all sides.
  3. Combine the coconut milk, soy sauce, brown sugar, curry powder, ground ginger, salt, and pepper.
  4. Simmer covered for about 25-30 minutes or until chicken is tender.
  5. Serve garnished with chopped cilantro.

Notes

Pairs well with jasmine rice or naan. Leftovers can be stored in the fridge for up to 3 days or frozen for a month.
