A vibrant and refreshing summer dessert combining the sweetness of roasted strawberries with zesty lime and fragrant basil.

  • 1 pound ripe strawberries, hulled and halved
  • 1 tablespoon olive oil
  • 2 tablespoons sugar
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest
  • 1 cup heavy cream
  • 1 cup whole milk
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup fresh basil leaves, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the strawberries with olive oil and 2 tablespoons of sugar. Spread them out on a baking sheet and roast for about 20 minutes until they are soft and caramelized.
  3. Allow the strawberries to cool. Then blend them with lime juice and lime zest until smooth.
  4. Whisk together the heavy cream, whole milk, 3/4 cup sugar, and vanilla extract until everything is nicely combined.
  5. Stir in the roasted strawberry mixture and chopped basil into the cream mixture, blending the flavors beautifully.
  6. Pour the combined mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
  7. Transfer the churned ice cream into a container and freeze for at least 4 hours until it is firm and ready to be enjoyed.
