Ingredients

  • Corn tortillas
  • Eggs
  • Refried beans
  • Tomato sauce
  • Jalapeños
  • Onion

Instructions

  1. Warm the corn tortillas in a skillet until warm and slightly crispy.
  2. Cook the eggs to your preference (sunny side up is traditional) in another pan.
  3. Heat the refried beans in a saucepan until warm.
  4. Prepare the tomato sauce by sautéing onion and jalapeños in a bit of oil, then adding tomato sauce and simmering for a few minutes.
  5. Assemble the dish by placing a tortilla on a plate, spreading some refried beans, topping with an egg, and spooning the tomato sauce over it.
