Delicious honey roasted carrots that are sweet, savory, and slightly spicy, perfect for any meal.

Ingredients

  • 1 pound Carrots (Peeled and cut into 2-inch chunks)
  • 2 tablespoons Extra Virgin Olive Oil (Can substitute with melted coconut oil)
  • 1 teaspoon Kosher Salt (Adjust to taste)
  • 1/2 teaspoon Black Pepper (Freshly ground is preferred)
  • 2 tablespoons Butter (Can substitute with vegan butter or olive oil)
  • 2 tablespoons Honey (Maple syrup can be used for a vegan version)
  • 1/4 teaspoon Cayenne Pepper (Can be omitted for milder flavor)
  • 1 tablespoon Fresh Thyme or Parsley (Use dried thyme as substitute in lesser amounts)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and slice the carrots into 2-inch chunks.
  3. Combine the carrot chunks with olive oil, kosher salt, and black pepper in a large mixing bowl.
  4. Add in the butter and honey, mixing thoroughly until the carrots are evenly coated.
  5. Sprinkle in the cayenne pepper for a touch of heat, if desired.
  6. Spread the carrots in a single layer on a baking sheet lined with parchment paper.
  7. Roast in your preheated oven for 25-30 minutes, flipping once halfway through.
  8. Remove the carrots from the oven and sprinkle with fresh thyme or parsley before serving.

Notes

Ensure carrots are cut uniformly for even roasting. Leftovers can be stored in an airtight container in the fridge for up to 3-4 days.
