Delightful honey butter cornbread muffins that are perfect for breakfast, brunch, or as a side dish.

Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup honey
  • 2 large eggs
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a muffin tin.
  2. Mix together the cornmeal, flour, sugar, baking powder, and salt in a large bowl until combined.
  3. Combine the buttermilk, honey, eggs, and melted butter in another bowl.
  4. Pour the wet ingredients into the dry mixture and stir gently until just combined.
  5. Scoop the batter into the muffin tins, filling each cup about two-thirds full.
  6. Bake for 15-20 minutes until golden brown and a toothpick comes out clean.
  7. Cool for five minutes in the pan before transferring to a wire rack.
