  • 23 pounds chuck roast
  • 1/2 cup honey
  • 1/2 cup balsamic vinegar
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 1 cup beef broth
  • Salt and pepper, to taste
  • Fresh herbs (such as rosemary or thyme), for garnish

Instructions

  1. Preheat your slow cooker, setting it to low heat.
  2. Generously season the chuck roast with salt and pepper on all sides.
  3. Combine the honey, balsamic vinegar, minced garlic, and chopped onion in a mixing bowl.
  4. Place the seasoned chuck roast in the preheated slow cooker.
  5. Pour the honey balsamic mixture evenly over the top of the roast.
  6. Add the beef broth around the roast.
  7. Cover the slow cooker and let it cook on low for 6-8 hours.
  8. Remove the roast from the slow cooker, slice it, and serve garnished with fresh herbs.
