A delightful Baked Honey Cod Dinner with a sweet and tangy glaze, served alongside steamed broccoli and optional rice or quinoa.

  • 4 cod fillets (approximately 6 ounces each)
  • ¼ cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • Salt and pepper, to taste
  • 1 teaspoon fresh parsley, chopped (for garnish)
  • Lemon wedges, for serving
  • 2 cups of steamed broccoli (optional for serving)
  • 1 cup of cooked rice or quinoa (optional for serving)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine honey, soy sauce, Dijon mustard, minced garlic, olive oil, lemon juice, salt, and pepper in a mixing bowl. Whisk together until well blended.
  3. Rinse the cod fillets under cold water and pat them dry with a paper towel.
  4. Place the cod fillets in a baking dish, ensuring they are spaced apart for even cooking.
  5. Pour the honey mixture over the cod fillets, coating them evenly.
  6. Bake the cod in the preheated oven for 12 to 15 minutes, or until the fish is opaque and flakes easily with a fork.
  7. Steam the broccoli until tender and bright green, about 5-7 minutes.
  8. Garnish the cooked cod with chopped parsley and serve hot with lemon wedges, steamed broccoli, and your choice of cooked rice or quinoa.

Notes

For a richer flavor, marinate the fish for about 30 minutes in the refrigerator. Store leftovers in an airtight container for up to 2 days.
