Ingredients

  • 2 teaspoons sugar
  • 2 teaspoons active dry yeast
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • â…“ cup baking soda (for boiling solution)
  • 1 large egg, beaten (for egg wash)
  • Coarse salt (for sprinkling)
  • Optional: melted butter for brushing

Instructions

  1. Activate the yeast: In a large bowl, combine the warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
  2. Mix the dough: Add the flour and salt, and stir until a shaggy dough forms.
  3. Knead the dough: Turn it onto a floured surface and knead for about 5-7 minutes until smooth and elastic.
  4. Let it rise: Place in a greased bowl, cover with a towel, and let it rise until doubled in size, about 1 hour.
  5. Shape the bites: Punch down the dough, divide it into pieces, and roll into logs. Cut into nuggets.
  6. Prepare the boiling solution: Boil 10 cups of water and add baking soda carefully.
  7. Boil the bites: Drop pretzel bites in batches, boiling for about 30 seconds before removing.
  8. Add the egg wash: Brush with beaten egg and sprinkle with coarse salt.
  9. Bake the pretzel bites: Preheat oven to 425°F (220°C) and bake for 10-12 minutes until golden brown.
  10. Cool and enjoy: Let cool on a wire rack and brush with melted butter if desired.
