A comforting bowl of creamy broccoli cheddar soup, perfect for chilly days.

Ingredients

  • 2 cups broccoli florets
  • 1/2 cup sharp cheddar cheese, shredded
  • 1/4 cup onion, chopped
  • 2 cups vegetable broth
  • 1 cup milk
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste

Instructions

  1. Melt the butter in a large pot over medium heat. Add the chopped onion and sauté until softened.
  2. Stir in the flour to make a roux, cooking for about a minute until it’s lightly golden.
  3. Add the vegetable broth gradually, whisking until well combined and bring to a simmer.
  4. Cook the broccoli florets until tender, about 10 minutes.
  5. Stir in the milk and cheese, cooking until the cheese melts and the soup is creamy.
  6. Season with salt and pepper to taste. Serve hot and enjoy!

Notes

For extra flavor, add garlic when sautéing the onions. Use fresh broccoli for the best taste, but frozen can work in a pinch.
