A creamy and refreshing homemade mint ice cream perfect for summer gatherings.

Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 cup fresh mint leaves
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 4 egg yolks

Instructions

  1. Combine Cream, Milk, and Sugar: In a medium saucepan, combine the heavy cream, whole milk, and sugar. Heat over medium until the sugar is dissolved.
  2. Infuse with Fresh Mint: Add the fresh mint leaves and bring to a simmer. Remove from heat and let it steep for about 30 minutes.
  3. Strain the Mint Leaves: Strain the mixture through a fine-mesh sieve to remove the mint leaves.
  4. Whisk the Egg Yolks: In a separate bowl, whisk the egg yolks until they are light in color. Slowly add the warm cream mixture to the yolks, whisking continuously.
  5. Thicken the Mixture: Return the mixture to the saucepan and cook over low heat until it thickens slightly, stirring frequently.
  6. Add Flavor: Remove from heat and stir in the vanilla extract and a pinch of salt.
  7. Chill the Mixture: Chill the mixture in the refrigerator for about 2 hours.
  8. Churn in an Ice Cream Maker: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  9. Freeze Until Firm: Transfer the churned ice cream to a container and freeze until firm.
  10. Serve and Enjoy: Scoop into bowls, add your favorite toppings, serve, and enjoy.
