2 cups heavy cream
1 cup whole milk
3/4 cup granulated sugar
1 cup fresh mint leaves
1 teaspoon vanilla extract

Instructions
Combine Cream, Milk, and Sugar: In a medium saucepan, combine the heavy cream, whole milk, and sugar. Heat over medium until the sugar is dissolved.
Infuse with Fresh Mint: Add the fresh mint leaves and bring to a simmer. Remove from heat and let it steep for about 30 minutes.
Strain the Mint Leaves: Strain the mixture through a fine-mesh sieve to remove the mint leaves.
Whisk the Egg Yolks: In a separate bowl, whisk the egg yolks until they are light in color. Slowly add the warm cream mixture to the yolks, whisking continuously.
