Deliciously sweet and tart homemade lemon bars with a buttery crust and bright lemon filling, perfect for any occasion.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 1/2 teaspoon baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish to prepare for the crust.
  2. Combine the flour, softened butter, and powdered sugar to form a sweet dough. Press this mixture evenly into the bottom of the prepared baking dish.
  3. Bake the crust for about 15 minutes, until it’s lightly golden.
  4. Whisk together the eggs, granulated sugar, lemon juice, lemon zest, and baking powder until smooth.
  5. Pour the lemon filling over the baked crust, spreading it out to cover evenly.
  6. Bake for an additional 20 minutes, until the filling is set.
  7. Allow to cool completely before slicing into squares. Dust generously with powdered sugar before serving.

Notes

For added flavor, consider serving with whipped cream or vanilla ice cream. Store leftovers in an airtight container in the refrigerator for up to a week.
