Fluffy, flavorful, and customizable egg bites that are perfect for meal prep and a delicious breakfast on the go.

  • 1/2 cup cottage cheese
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1 cup diced vegetables (spinach, bell peppers, onions, etc.)
  • Salt and pepper to taste
  • Optional seasonings (such as garlic powder or herbs)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. Blend the eggs, cottage cheese, salt, and pepper in a blender until smooth.
  3. Add the shredded cheese and diced vegetables to the blend.
  4. Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake for 20-25 minutes or until the egg bites are set and lightly golden.
  6. Let them cool slightly before removing from the tin. Enjoy warm or store in the refrigerator for quick breakfasts!
