A comforting and nourishing lentil soup perfect for chilly evenings, packed with protein and fiber.

Ingredients

  • 1 cup lentils
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 4 cups vegetable broth
  • 2 cups water
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onions, diced carrots, and celery to the pot. Sauté until the vegetables are softened, about 5-7 minutes.
  2. Stir in the minced garlic along with the cumin and coriander, cooking for another minute.
  3. Add the lentils, vegetable broth, and water to the pot. Stir well, bring the mixture to a boil, then reduce the heat and let it simmer for about 25-30 minutes.
  4. Season your soup with salt and pepper to taste.
  5. Serve the soup hot, garnished with fresh parsley.
