  • 1/2 cup oats
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine in a mixing bowl 1 cup of almond flour, 1/2 cup of oats, 1/2 teaspoon of baking soda, and 1/4 teaspoon of salt.
  3. Mix together 1/4 cup of melted coconut oil, 1/4 cup of honey (or maple syrup), and 1 teaspoon of vanilla extract until smooth.
  4. Combine the wet mixture with the dry ingredients, stirring until combined.
  5. Fold in 1/2 cup of dark chocolate chips.
  6. Scoop the dough onto a lined baking sheet, spacing them about 2 inches apart and flattening each slightly.
  7. Bake in your preheated oven for 10-12 minutes, or until the edges are lightly golden.
  8. Let cool for a few minutes before transferring to a wire rack.
