Ingredients

  • 1 cup rolled oats
  • 1/2 cup mashed banana
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or dried fruit (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine rolled oats, mashed banana, almond butter, honey (or maple syrup), vanilla extract, baking powder, and salt in a bowl until well combined.
  3. Fold in chocolate chips or dried fruit if desired.
  4. Drop spoonfuls of the mixture onto a lined baking sheet.
  5. Bake for 10-12 minutes or until golden brown.
  6. Allow to cool before serving.

Notes

Store in an airtight container for up to a week at room temperature or refrigerate for up to two weeks. These cookies can also be frozen for up to three months.
