Delicious gluten-free cookies made with almond flour and dark chocolate chips, perfect for satisfying your sweet tooth without guilt.

  • 2 cups almond flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil (melted)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Whisk together the almond flour, baking soda, and salt in a medium bowl.
  3. Combine the melted coconut oil, honey (or maple syrup), and vanilla extract in a separate bowl and whisk until smooth.
  4. Gradually add the dry mixture into the wet mixture, stirring until you have a thick cookie dough, then fold in the dark chocolate chips.
  5. Scoop tablespoons of the dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for about 10 to 12 minutes.
  6. Remove from the oven and let cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
