Ingredients

  • 1 cup onion, chopped
  • 2 cups carrots, diced
  • 2 cups celery, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 pound chicken breast
  • 2 leaves bay leaves
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 pinch red pepper flakes
  • 1 cup pasta
  • 1 tablespoon lemon juice
  • ¼ cup parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; cook for 5-7 minutes.
  3. Stir in garlic; cook for 1 minute.
  4. Pour in chicken broth; stir to combine.
  5. Add chicken breast and bring to a gentle boil.
  6. Season with bay leaves, oregano, thyme, and red pepper flakes; let simmer for 20 minutes.
  7. Add pasta and shredded chicken; simmer for 10 minutes.
  8. Stir in lemon juice.
  9. Remove bay leaves and garnish with parsley before serving.

Notes

For a vegetarian version, replace chicken with chickpeas and use vegetable broth.
