Delightful Hawaiian Chicken Kebabs with a balance of sweet pineapple, savory chicken, and colorful veggies, perfect for summer gatherings.

Ingredients

  • 1 lb chicken breast, cubed
  • 1 cup pineapple chunks
  • 1 bell pepper, cut into squares
  • 1 red onion, cut into squares
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste

Instructions

  1. Mix the marinade by combining soy sauce, honey, olive oil, garlic powder, grated ginger, salt, and pepper in a bowl.
  2. Marinate the chicken by adding it to the marinade, ensuring each piece is well-coated. Cover and refrigerate for at least 30 minutes.
  3. Preheat your grill to medium-high heat.
  4. Assemble the kebabs by threading chicken, pineapple, bell pepper, and onion onto skewers, alternating the ingredients.
  5. Grill the kebabs for 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  6. Serve hot off the grill, either alone or with a side of rice or salad.

Notes

Make sure your grill is well-oiled to prevent sticking. If using wooden skewers, soak them in water for 30 minutes prior.
