A comforting casserole filled with ground beef, mixed vegetables, and layers of cheesy potato slices, perfect for family gatherings.

  • 1 pound Ground beef (Halal-certified)
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 2 cups Frozen mixed vegetables (peas and carrots)
  • 4 cups Potato slices (fresh or frozen)
  • 1 can Cream of mushroom soup (Halal-friendly)
  • 2 cups Shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • 1 tablespoon Olive oil
  • 1 teaspoon Paprika

Instructions

  1. Sauté the Aromatics: In a large skillet over medium heat, warm the olive oil. Add the diced onion and minced garlic, sautéing until fragrant and translucent—about 3-4 minutes.
  2. Brown the Beef: Add the ground beef, season with salt, pepper, and paprika, and cook until browned and fully cooked through, breaking it up as you go.
  3. Combine with Veggies: Stir in the frozen mixed vegetables and allow them to thaw and combine with the meat for about 5 minutes.
  4. Mix in the Soup: Pour in the cream of mushroom soup and mix well until everything is coated.
  5. Layer the Potatoes: In a greased baking dish, arrange half of the potato slices at the bottom. Pour the beef and vegetable mixture over the potatoes, spreading it evenly. Top with the remainder of the potato slices.
  6. Add Cheese and Bake: Cover the top layer of potatoes with the shredded cheese. Bake in a preheated oven at 375°F (190°C) for about 25-30 minutes.
  7. Rest and Serve: Let the casserole rest for a few minutes before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months.
