A comforting casserole featuring ground turkey, zucchini, and groats, topped with melty cheese.

  • 1 pound Ground Turkey (85-93% lean)
  • 2 cups Zucchini (Salt and drain before use)
  • 1 cup Groats (Pre-cook before adding)
  • 1 can Diced Tomatoes (Drain well)
  • 1 medium Onion (Finely diced)
  • 2 cloves Garlic (Minced)
  • 1 teaspoon Oregano (Dried)
  • 1 teaspoon Paprika
  • 1/4 cup Fresh Basil (Add near end of baking)
  • 1 cup Shredded Cheese (Choose your favorite)
  • 1 large Green Salad (Crisp salad)
  • 1 loaf Crusty Bread (Warm)

Instructions

  1. Begin by prepping your zucchini. Slice it into half-moons, sprinkle with a bit of salt, and let it drain in a colander.
  2. In a large skillet over medium heat, add a splash of olive oil. Once it’s shimmering, toss in the finely diced onion. Sauté until it becomes translucent, about 5 minutes.
  3. Then, add the ground turkey and cook until browned, breaking it apart with a spatula.
  4. Once the turkey is cooked through, mix in the minced garlic, oregano, and paprika. Allow these to cook together for an additional minute.
  5. Stir in the drained zucchini, diced tomatoes, and pre-cooked groats. Mix well and season with salt and pepper.
  6. Transfer the mixture to a greased baking dish. Top with an even layer of shredded cheese.
  7. Cover the dish with foil and bake in a preheated oven at 375°F (190°C) for 20 minutes.
  8. Remove the foil and bake for an additional 10 minutes until bubbly and golden. Sprinkle fresh basil on top before serving.
  9. Let the casserole sit for 5 minutes before serving.

Notes

Serve with a green salad and warm crusty bread for a complete meal. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
