These flavorful Ground Turkey Taco Bowls are an easy and healthy twist on classic tacos, packed with nutrients and customizable toppings.

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup diced tomatoes
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup cooked rice
  • Toppings: shredded cheese, lettuce, salsa, avocado, cilantro

Instructions

  1. Sauté the aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and allow it to cook for another minute.
  2. Brown the turkey: Add the ground turkey to the skillet. Cook until browned, breaking it up with a spatula, about 5-6 minutes.
  3. Mix in the goodness: Stir in the taco seasoning, diced tomatoes, black beans, and corn. Mix everything well and let it simmer together for 5-7 minutes until heated through.
  4. Serve the turkey mixture over cooked rice and top with your favorite toppings like shredded cheese, lettuce, salsa, avocado, and cilantro.
