A comforting one-pan meal featuring ground turkey and sweet potatoes, perfect for busy weeknights.

Ingredients

  • 1 lb ground turkey
  • 2 medium sweet potatoes, diced
  • 1 bell pepper, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat until it shimmers.
  2. Add the diced sweet potatoes and cook for about 10 minutes, stirring occasionally.
  3. Stir in the diced onion, chopped bell pepper, and minced garlic; cook for an additional 5 minutes.
  4. Push the vegetables to one side and add the ground turkey to the pan; cook for 5-7 minutes, breaking it apart.
  5. Once the turkey is cooked, stir everything together and add the paprika, cumin, salt, and pepper.
  6. Cook for another 2-3 minutes to meld the flavors.
  7. Serve hot, garnished with fresh parsley if desired.

Notes

Leftovers can be stored in an airtight container for up to 4 days. Can also be frozen for up to 2 months.
