A quick and delightful stir fry combining ground turkey and fresh vegetables, perfect for busy weeknights.

Ingredients

  • 1 pound ground turkey
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, etc.)
  • 2 tablespoons soy sauce
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant.
  3. Brown the ground turkey in the skillet, breaking it apart with a spatula until browned and no longer pink, about 5-7 minutes.
  4. Add the mixed vegetables and cook for another 3-5 minutes until they are tender.
  5. Stir in the soy sauce and season with salt and pepper to taste.
  6. Serve over cooked rice or noodles, and enjoy the colorful symphony of flavors!

Notes

Pairs well with jasmine rice or whole grain noodles. Sautéing some sesame seeds or green onions is also a great addition.
