A modern twist on a classic comfort dish, this Ground Turkey Shepherd’s Pie is packed with lean turkey, vibrant vegetables, and creamy mashed potatoes.

  • 2 cups mixed vegetables (peas, carrots, corn)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups mashed potatoes
  • 1 cup chicken broth
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat olive oil in a skillet over medium heat, then add the chopped onion and garlic, sautéing until softened and fragrant, about 3-4 minutes.
  3. Add ground turkey to the skillet and cook until browned, breaking it up with a spoon, about 5-7 minutes.
  4. Stir in mixed vegetables, chicken broth, Worcestershire sauce, salt, and pepper. Cook for about 5-7 minutes until everything is combined and heated through.
  5. Transfer the turkey mixture to a baking dish and spread it evenly.
  6. Spoon mashed potatoes on top, spreading them out to cover the filling completely, smoothing the top with a fork if desired.
  7. Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.
  8. Let the Shepherd’s Pie cool slightly before serving so the layers hold together beautifully.

Notes

Use store-bought mashed potatoes for a quicker option. Feel free to add herbs for extra flavor. This dish can be made gluten-free by ensuring Worcestershire sauce is gluten-free.
