A quick and nourishing one-pot meal featuring ground turkey, orzo pasta, and colorful veggies, ready in just 25 minutes.

Ingredients

  • 1 pound ground turkey
  • 1 cup orzo pasta
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup spinach, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat the oil in a large pot over medium heat. Add the onion and garlic, cooking until softened.
  2. Brown the turkey until cooked through.
  3. Incorporate the bell pepper, zucchini, and spinach, cooking for a few minutes until vegetables are tender.
  4. Combine the orzo and chicken broth, then bring to a boil.
  5. Season with Italian seasoning, salt, and pepper, then cover and simmer for 10-12 minutes or until orzo is cooked.
