A comforting and hearty soup filled with fresh vegetables and savory ground beef, perfect for chilly evenings.

Ingredients

  • 2 tablespoons olive oil
  • 1 diced onion
  • 2 minced garlic cloves
  • 1 pound ground beef
  • 3 medium carrots, sliced
  • 2 ribs celery, chopped
  • 1 bell pepper, chopped
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 4 cups beef broth
  • 2 cups water
  • 1 cup frozen green beans
  • 1 cup corn
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until translucent, about 3-4 minutes.
  2. Add ground beef, breaking it apart. Cook until browned, about 5-7 minutes, and drain excess fat.
  3. Stir in carrots, celery, and bell pepper. Cook for 5 minutes until they soften.
  4. Add diced tomatoes, beef broth, water, green beans, corn, oregano, thyme, and bay leaf. Stir to combine.
  5. Bring to a boil, then reduce heat to low and cover. Let it simmer for 30-40 minutes.
  6. Taste and adjust seasoning with salt and pepper, then remove the bay leaf.
  7. Ladle into bowls, garnishing with parsley. Serve with bread or crackers.
