A comforting casserole featuring ground beef, potatoes, and mixed vegetables, perfect for family gatherings.

  • 1 pound ground beef
  • 4 medium potatoes, diced
  • 1 cup mixed vegetables (like peas and corn)
  • 1 onion, chopped
  • 1 can diced tomatoes
  • 1 cup shredded cheese (optional)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the ground beef in a large skillet over medium heat until fully cooked, then drain excess fat.
  3. Combine the cooked ground beef, diced potatoes, mixed vegetables, chopped onion, diced tomatoes, and seasonings in a large mixing bowl. Stir well.
  4. Transfer the mixture to a greased 9×13 inch baking dish, spreading it evenly.
  5. Bake covered with foil for 45 minutes in the preheated oven.
  6. Add cheese (if using), remove the foil, and bake for an additional 10-15 minutes until cheese is melted and bubbly.
  7. Cool for a few minutes before serving.

Notes

Pairs well with a side salad or crusty bread. Leftovers can be stored in an airtight container for up to 3 days or frozen for up to 2 months.
