A vibrant and fresh Grilled Corn Salad that captures the essence of summer with sweet corn, juicy tomatoes, and zesty lime dressing.

Ingredients

  • 4 ears of corn, husked
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium heat.
  2. Grill the corn for about 10-15 minutes, turning occasionally, until charred. Let it cool and slice the kernels off the cob.
  3. Combine the corn kernels, cherry tomatoes, diced red bell pepper, finely chopped red onion, and fresh cilantro in a large bowl.
  4. Whisk together the lime juice, olive oil, salt, and pepper in a small bowl.
  5. Pour the lime dressing over the salad and toss to combine.
  6. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.

Notes

For extra flavor, brush corn with butter mixed with garlic before grilling. Substitute lime with lemon if preferred. Add black beans or avocado for a heartier salad.
