A playful fusion of classic grilled cheese and hearty burrito fillings, featuring melty cheese, rice, and beans wrapped in a tortilla.

Ingredients

  • 2 slices of bread
  • 2 slices of cheese (cheddar, mozzarella, or your choice)
  • 1 large tortilla
  • 1/2 cup cooked rice
  • 1/4 cup black beans (cooked and rinsed)
  • 1/4 cup cooked chicken or ground beef (optional)
  • 1/4 cup salsa
  • Butter for grilling

Instructions

  1. Prepare your skillet. Heat a skillet over medium heat.
  2. Butter your bread. Butter one side of each bread slice.
  3. Assemble the tortilla. Place the tortilla on the skillet and layer the cheese, rice, black beans, meat (if using), and salsa on one half.
  4. Fold and complete. Fold the tortilla over to cover the filling.
  5. Lay on the bread. Top the folded burrito with the bread slices, buttered side down.
  6. Grill to perfection. Grill until the bread is golden brown, then flip to grill the other side.
  7. Melted goodness. Once the cheese melts, remove from heat.
  8. Slice and serve. Cut in half and enjoy!

Notes

Serve with additional salsa or a fresh salad. Store leftovers in an airtight container for up to 2 days.
