A flavorful and comforting bread filled with green chiles and cheese, perfect for brunch or as a side dish.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 to 2 teaspoons sugar (optional)
  • 1 to 2 green chiles (diced)
  • 1 1/2 to 2 cups shredded cheese (cheddar, Monterey Jack, or blend)
  • 1 to 1 1/4 cups milk (adjust as needed)
  • 2 large eggs (beaten)
  • 2 to 3 tablespoons melted butter or oil

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a loaf pan by greasing it or lining it with parchment paper.
  2. Whisk together your flour, baking powder, salt, and optional sugar in a large bowl.
  3. Add the diced green chiles and most of the shredded cheese to the dry mixture. Reserve some cheese for topping later.
  4. Mix the milk, beaten eggs, and melted butter until smooth in a separate bowl.
  5. Combine the wet ingredients into the dry ones, stirring gently.
  6. Transfer the batter into the prepared loaf pan, and sprinkle the reserved cheese on top.
  7. Bake for 45 to 55 minutes, checking for doneness with a toothpick.
  8. Cool the bread in the pan for a few minutes before transferring it to a wire rack.

Notes

For variations, try different types of cheese or add sautéed onions for extra flavor.
