  • 4 lamb shanks
  • 4 cloves garlic, minced
  • 1 cup olives (black or green), pitted
  • 2 cups chicken or beef broth
  • 1/4 cup olive oil
  • 1 onion, chopped
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat the olive oil in a large Dutch oven or oven-safe pot over medium-high heat until shimmering.
  3. Brown the lamb shanks on all sides, then remove them and set aside.
  4. Sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
  5. Stir in the olives, broth, dried oregano, dried thyme, salt, and pepper.
  6. Return the browned lamb shanks to the pot, ensuring they are submerged in the liquid.
  7. Braise in the oven for about 2 to 2.5 hours, or until the lamb is tender.
  8. Serve with warm bread or over rice, garnished with fresh parsley.
